- an electric mixer or a pastry robot
- a bowl (for butter)
- a spatula
- a cake tin
- baking paper (optional)
Ingredients :
- 37 grams ground almonds
- 90 grams powdered sugar
- 37 grams flour
- half a vanilla bean or one teaspoon liquid vanilla
- 3 egg whites
- a pinch of salt
- 50 grams melted butter
Instructions :
1. Preheat the oven to 200°C.
2. In the salad bowl, mix ground almonds, sugar and flour with the spatula. If you use vanilla powder : it’s time to add it too. If you use liquid vanilla : wait a little longer.
3. Beat the egg whites until they are stiff (in electric mixer or in pastry robot). When they start foaming, add a pinch of salt. Stop beating when they have the consistency of shaving foam.
4. Incorporate the egg whites to the salad bowl (where the powdered ingredients are) with the spatula. If you use liquid vanilla : you can add it now.
5. Pour the melted butter into the preparation and mix.
6. Pour the mixture into a buttered cake tin (instead of butter, you can use baking paper) and bake for 15/20 minutes.
